Best KWV Brandy 10 YO Cocktail Presented by Kirsti Klein

60 ml KWV Brandy 10 YO
30 ml orange liquor
4 tbsp white sugar
300 ml white wine
4 eggs, separated
25 ml cinnamon syrup
Cinnamon stick
Add KWV Brandy, orange liquor, sugar, wine, egg yolks and 1 tbsp cinnamon syrup to a saucepan on low heat. Stir until mixture is steaming. Turn off heat and set aside.
In a separate bowl, whisk egg whites until light and fluffy. Slowly add 7,5 ml cinnamon syrup and whisk until stiff. Transfer to a piping bag. Add 1 tsp cinnamon syrup into the glass. Add your liquid to the glass and pipe the whites on top. Grate cinnamon over the top. Torch stick cinnamon and add to the side of the glass. Serve and enjoy!

400 ml KWV Cruxland Gin
4 ClemenGold mandarins
500 g White Sugar
500 g Water
For the Infusion:
Peel the ClemenGold and cut out the pith (white inner part of the peel).
Freeze the flesh of the ClemenGold.
Add KWV Cruxland Gin and the peel into a jar and seal for 8 days.
For the Stock Syrup:
Add sugar and water to a saucepan and heat.
Cut the frozen Clemengold into pieces and add to the syrup.
Simmer for approximately 3 hours. Note, the syrup must not boil.
Strain and leave to cool completely, preferably overnight.
Strain the gin into a jar and discard the peels.
Add 400 ml of the stock syrup to 400 ml of Gin.
Mix well and chill.
COCKTAIL MIX
25 ml Orange juice
25 ml KWV Cruxland Gin
50 ml Clemencello
6 – 10 ice cubes
Cool classes in the refrigerator (or with ice).
Shake all ingredients together in a cocktail shaker and strain.
Garnish and serve.
For the explosion
Sphere:
2 g Calcium lactate
125 ml Cocktail mix
Ensure calcium lactate is completely dissolved in the cocktail mix then put into moulds and freeze.
Bath:
480 ml Distilled water
7.5 ml Sodium Alginate
Blitz together and rest until clear.
Drop frozen cocktail spheres into the water bath and leave for approximately 2 minutes.
Remove from the bath and leave in a container overnight.
Serve with Clemencello.

200 g FRÜT Banana
50 ml FRÜT Beetroot juice
100 g FRÜT Strawberries
1 small apple
200 g Lancewood Low Fat Yoghurt
5 g FRÜT Flaxseed
honey
100 ml floral infused Kombucha
Garnish: Herbal Flowers
Combine ingredients into a glass and blend well. Pour into glass and serve with a paper straw.
